Sanitize the dedicated containers and utensils you will work with, details in the general safety guidelines.
Heat phases A and B, separately, in a water bath, to 75°C.
Pour phase B over phase A, in a single motion, and mix (with the old mixer 3 minutes, with new mixer 1 minute).
Sprinkle xanthan gum over the composition and mix well.
Place the glass in a bowl with cold water and mix (with the old mixer for 3 minutes, with the new mixer for 1 minute).
After cooling to about 40°C, add the ingredients of phase D and stir thoroughly by hand. At the end, mix the composition for a few seconds. pH ~ 6
After the composition has cooled completely, the cream is transferred to the dedicated container.
Other vegetable oils of your choice can be used instead of hazelnut oil.
